Yum ..... I love Maple Syrup . And you all must know that the best maple syrup comes for right around my neibourhood and also Quebec .
They don't collect the sap now but in the spring after the cold of the winter has passed and most places don't use the pail and bucket method any more . They have tubes that run from one tree to another and right into the sugar shack .
I actually go directly to the sugar bush to buy the dark amber syrup as it is more concentrated and to me has more flavour . The stuff you buy in the store is pure but it is watered down.
