Pineapple upside down cake

Cake
1 1/2 cups sugar
2 1/2 cups flour
1 Tablespoon baking powder
1/2 cup juice (can use milk if desired)
1/4 cup milk
1 cup butter (margarine) melted or really soft
3/4 teaspoons salt
4 eggs
2 teaspoons vanilla

Topping
1/4 cup brown sugar
3 Tablespoons butter (margarine)
10 pineapple slices
10 cherries


Sift together flour, baking powder and salt and set aside. Beat eggs for 2 minutes. Add sugar 1/2 cup at a time. Mix well. Add vanilla and mix, add juice or milk and milk and mix, add butter or margarine and mix. Pour flour mixture into batter while mixer is running. Fully mix flour in and once fully incorporated turn off mixer.

Melt the butter in the bottom of a 9x13 pan, and sprinkle the brown sugar on top of the butter. Then put the pineapple on top of the brown sugar and a cherry in the middle of each pineapple ring. I had to cut 2 of the pineapple rings in half and then place them on the side and put the cherries in the middle of the pineapple halves.

Pour batter over the pineapple and Bake at 350° For 30-35 min

This looks so good. My mom used to make it but when she passed I never got the recipe. I think this is much like hers though so will save it. She used a cast iron skillet to bake it in. So good. Even made this for my 14th birthday party because she knew it was my favorite. So well remembered~ :)
 
When I first saw this recipe, I thought that it might be nice to use fresh ingredients right off the tree... so, I grafted a branch from an apple tree onto a pine tree to grow "pine apples" but unfortunately, it didn't work out... ;)... :LOL: ... :D

Well there you go, every knows that it's the pine tree branch that gets grafted unto the apple tree. Sheesh!
