Stuffed Cornish hen

Clean the hen of all the giblets. Rinse the bird.
Dice up 1 granny smith apple and stuff it inside the cavity
season the outside with a pinch of sea salt and B pepper.
Sprinkle lite brown sugar all over the bird top to bottom.
Lightly sprinkle Hickory powder "LIGHTLY" it's strong, all over the bird
Place on a cake cooling rack on top a cast iron "10" "skillet breast side down so the juices go to the breast. bake at 400 degrees 4 1 hour. Baste last 10 minutes with melted butter being careful not to rub off the glaze. Just dab the brush all over. Remove from oven and let rest 10 minutes. it's pull apart tender n juicy!MMMMMMMMMMMMMMMM I wish i had a camera AAAAAAAAAAAHHHHHHHH
You can taste the apple in the meat. It IS delicious indeed. Serve with mashed potatos.
