Messiaen:

Note: Messiaen's music is sometimes very modern, so if you do not like that type of music, you might not like his 'Quartet for the End of Time'. However, his organ works are superb!

(Interesting fact: Messiaen wrote the 'Quartet' while in a German concentration camp)
 
One of my favorite choral pieces to sing in HS was 'Alleluia' by Randall Thompson.

He knew how to write a tenor part!

Also 'The Road Not Taken' from his Frostiana series.

'Simple Song' from Bernstein's Mass
