Popcorn is probably too "carby", so I will try to do better.
Beef Pepper Cabbage
Ingredients:
1 pound ground beef
1 head of green cabbage
1 large red bell pepper, chopped (or a bag of frozen bell pepper mix)
1 medium onion, chopped
1 tablespoon of minced garlic
3 tablespoons of Extra Virgin Olive oil
Basil, Salt and Black Pepper to taste
Chop up the cabbage and boil in water in a large pot for 15 minutes or until tender. I chop the onion and red bell pepper, and defrost the ground beef (if frozen) while the cabbage is boiling. Drain cabbage, set aside. In same large pot, brown the beef with the onion and red bell pepper stirring often. When beef is nearly browned, put the garlic in with beef mixture. After beef is browned, add the Olive oil, basil, salt, pepper and the cabbage. Mix together thoroughly and heat on medium heat until hot.
I usually put this on mashed potatoes, but if carb conscious, this is great by itself. Salt can be omitted also if need be.
